- Toss the rack. Well don't toss it, just don't use it for this.
- In the bottom of the roasting pan place a bunch of roughly chopped carrots, onions and celery, place your meat on it, add one cup of water and cover tightly and roast.
- Vary it, try using turnips, carrots and some green scallions.
- You can use just about any kind of root vegatable for this also.
